Creamy Zucchini, Blueberry, & Greens Smoothie

Zucchini in a smoothie?! Don’t knock this recipe until you’ve tried it! Combine it with avocado and hemp seeds for creaminess, berries for a bit of sweet and greens to balance it out. Now you have got a nutrient dense smoothie that is loaded up with fiber, antioxidants, potassium, magnesium, zinc, vitamin C, folate, and other B vitamins. It is an easy breakfast or snack that will help balance blood sugar and keep you feeling full!

Ingredients

  • 1 small avocado

  • 1 med zucchini

  • 1 cup of blueberries

  • 1-2 handful of greens (kale, spinach, chard)

  • 1-2 tbsp hemp seeds

  • 1/4 tsp cinnamon

  • Protein powder

  • 1-2 cups water or dairy alt (almond, coconut etc), may need more depending on protein powder and your desired consistency

  • Handful of ice if desired / needed

Instructions

  1. Add all ingredients to a high-speed blender and blend on high until creamy and smooth. Taste and adjust flavor as needed, adding more zucchini or avocado for creaminess, berries for sweetness, or dark leafy greens to help balance the flavor profile from the protein powder.
  2. Divide between 2 serving glasses (or more / less if altering batch size) and garnish with berries, hemp seeds or any other goodies (optional). Best when fresh. Leftovers can be stored in tightly sealed mason jars for up to 2 days or in the freezer for longer.

Note: Even if you don’t like zucchini, try this out first because you really can’t taste it! Otherwise, you can swap for yellow squash, cucumber, or celery. Swap out hemp seeds for other nuts, seeds, or nut butters. Mix it up however you’d like!
