Dilly Salmon & Roasted Rosemary Fingerling Potatoes with Asparagus

Prep time approx. 15 minutes. Cook time approx. 25 minutes
Gluten, dairy, grain, sugar free…and delicious!

I love this dish as it is so very simple, cooks quickly and has little prep work. You may also notice that I do love to spice things up, as I use little salt in cooking, but enjoy the taste of fresh herbs! So please add (yes) or subtract as you would like. note, I keep the skin on the salmon for the nutritional value.

Ingredients

  • 1lb Salmon fillet, skin on (optional)
  • 2-3 tsp fresh or dried dill
  • 1 sliced lemon, seeds removed
  • 1 tbsp coconut oil
  • 1lb fingerling potatoes cut in half or quarters (bite sized pieces)
  • 2-3 tbsp olive oil divided
  • 1 tbsp fresh or dried rosemary
  • 1 bunch asparagus, bottoms snapped off
  • salt and pepper to taste

Instructions

  1. This involves two casserole dishes, one for the potatoes and asparagus, and the other for the salmon. Preheat oven to 350 degrees.
  2. Spread a thin layer of coconut oil on the bottom of one casserole dish to prevent sticking. Sprinkle with dill. Next Place the salmon, skin side down on the oiled portion of the casserole dish. Next, sprinkle dill, salt and pepper to taste over the top of the Salmon. Add the slices of lemon on top of the fish. Set aside.
  3. In a large bowl, add the cut potatoes and drizzle 1-2 tbsp olive oil. Next, sprinkle fresh or dried rosemary to taste. Rosemary can be a powerfully flavorful herb, so go easy. I like 1 tbsp dried rosemary or more. But I also like a lot of herbs and spices! Coat the potatoes and then add along the edges of a large casserole dish.
  4. Next, place the cut asparagus, (keep whole except for the bottom portions that you snapped off) at the center of the casserole dish. Drizzle the asparagus with the remaining olive oil, and then sprinkle with salt and pepper.
  5. Place the casserole dish with the potatoes and asparagus in the oven.
  6. Allow to cook for 20-25 minutes, or until potatoes are tender.
  7. After 10 minutes of cooking, place the Salmon casserole dish in the oven (same temp.) allow both dishes to cook for another 12 minutes, or until salmon is cooked through and potatoes are tender.
  8. Remove from oven and enjoy!
