Homemade Chicken Soup

Ingredients

  • organic whole chicken

  • 2 large sprigs of fresh rosemary

  • 10 sprigs of fresh thyme

  • 5 leaves of fresh sage

  • 1 large yellow onion chopped

  • 4 cloves garlic chopped

  • 1 medium jalapeno pepper minced (optional)

  • 2-3″ ginger chopped

  • 2 sheets of good quality kelp, chopped (optional)

  • 4-5 celery stalks chopped

  • 4-5 carrots chopped
    -1 large sweet potato chopped

  • 1 bunch of swiss chard, stems and leaves separated and equally chopped

  • 8oz mushrooms chopped

Instructions

  1. 5 cups of ice

  2. 1 cup coconut water (use coconut milk for a creamer version)

  3. Juice of 2 limes (or lemons if you prefer)

  4. 1 pinch of lime zest

  5. 2 tbsp local honey

  6. Add all ingredients to blender and blend until smooth.
