Sauteed Kale with Apples

A standby and favorite recipe in my home, largely approved by friends and family. Okay, so the apple cider vinegar smells like stinky feet, but it tastes soooo good! I find that cooked kale can be easier to digest than raw for those with sensitive stomachs who are looking to enjoy their greens, and provides a large dose of Vit K and Calcium. Enjoy!

Ingredients

  • 1 Tbsp coconut oil
  • 1 large red onion, chopped
  • 1 large apple (such as braeburn, fuji, hard, sweet apple varieties work well for this recipe), cut in small chunks or slices
  • 2 Tbsp apple cider vinegar
  • 1 bunch curly kale, destemmed, cut in strips
  • salt/pepper to taste

Instructions

  1. Heat up the coconut oil medium heat in a large pan or wok and add chopped red onion.

  2. Let this cook 3-5 minutes, until partially translucent.

  3. Add the chopped apple and apple cider vinegar and allow to cook with cover on for another 3 minutes or until just soft.

  4. Lastly add in the cut kale, cover for a minute until it just begins to wilt, and then stir into the combined ingredients for another 3-5 minutes or until tender. Season with salt and pepper.
