Heat up the coconut oil medium heat in a large pan or wok and add chopped red onion.
Let this cook 3-5 minutes, until partially translucent.
Add the chopped apple and apple cider vinegar and allow to cook with cover on for another 3 minutes or until just soft.
Lastly add in the cut kale, cover for a minute until it just begins to wilt, and then stir into the combined ingredients for another 3-5 minutes or until tender. Season with salt and pepper.
