Vegetarian or Ground Turkey Chili

Ingredients
1 lb ground turkey (optional)
1 yellow summer squash diced

Ingredients

  • 1 lb ground turkey (optional)
  • 1 yellow summer squash diced
  • 1 each red, yellow, orange, green pepper diced
  • 1 large onion diced
  • 2-3 cloves garlic (more or less to taste) minced
  • 1 can dark red kidney beans rinsed and drained
  • 1 can black beans rinsed and drained
  • 1 can cannellini beans rinsed and drained
  • 2 large cans petite diced tomatoes
  • Cumin
  • Chili powder
  • Salt
  • Pepper
  • Olive oil

Instructions

  1. Heat olive oil in large saute pan.

  2. Add first 4 ingredients and saute until tender.

  3. Add minced garlic and stir in. In large pot heat the diced tomatoes.

  4. Add beans and spices to taste.

  5. Add in sauteed vegetables.

  6. May add cooked ground turkey if desired.
