Breakfast Egg Casserole

Ingredients
7 eggs
1 cup 4% fat cottage cheese

Ingredients

  • 7 eggs
  • 1 cup 4% fat cottage cheese
  • 1-2 cups diced vegetables of choice (asparagus, mushrooms, onions, peppers, broccoli, zucchini, spinach, etc…)
  • ½ cup Shredded cheese of choice
  • Salt and pepper to taste

Instructions

  1. Heat oven to 350 degrees and lightly grease 8 x 8 baking pan.

  2. Sauté vegetables until tender.

  3. Beat eggs and cottage cheese until well mixed.

  4. Pour half the egg mixture in the pan. Add vegetables and sprinkle cheese over. Add remaining egg mixture.

  5. Bake for 30 minutes. Check at 30 minutes but may need longer depending on the type of vegetables used. Makes 4 servings.
